  • 4 fillets Anchovies in oil, preferably high-quality
  • 2 large Eggs whole
  • 1 cup Pecorino cheese freshly grated

  • 2 tbsp Cooking oil olive oil is ideal

Method
 

Preparation Steps
  1. Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente.
  2. In a skillet, heat olive oil over medium heat. Add anchovies and sauté until dissolved.
  3. In a bowl, whisk eggs and cheese together, adding a splash of pasta water to temper.
  4. Combine cooked pasta with the sautéed anchovies off the heat. Quickly mix in the egg mixture.
  5. Adjust sauce consistency with reserved pasta water if too thick.
  6. Serve plated, garnished with extra Pecorino and black pepper.
