Ingredients
  

For the Salad
  • 8 ounces Pasta Fusilli is preferred
  • 1 medium Avocado Slightly ripe
  • 2 cups Spinach Can use thawed frozen spinach
  • 1 cup Fresh Herbs Basil and Dill
  • 2 medium Green Onions Can substitute with shallots
For the Dressing
  • 3-4 cloves Garlic Adjust amount to taste
  • 2 tablespoons White Wine Vinegar Can substitute with apple cider or rice vinegar
  • 2 tablespoons Nutritional Yeast Can omit or replace with vegan parmesan or miso

Method
 

Cooking Steps
  1. Cook the pasta in a large pot of salted boiling water for 8-10 minutes until al dente. Drain and set aside to cool.
  2. Cool the pasta by drizzling olive oil over it and adding a few ice cubes, stirring gently for about 5 minutes.
  3. In a food processor, blend the avocado, fresh herbs, white wine vinegar, garlic, and nutritional yeast until smooth and creamy.
  4. Return the cooled pasta to the pot. Add diced veggies and drained chickpeas, then pour the dressing over and toss to coat.
  5. Garnish with sliced green onions and serve immediately as a main dish or side salad.
