Method
 

Cooking Instructions
  1. Preheat the oven to 375°F (190°C).
  2. In a large pot over medium-high heat, melt butter and olive oil. Add seasoned top sirloin cubes and sear for 6-8 minutes.
  3. Add chopped onion and diced carrots, stir, and cook for another 4-5 minutes until softened.
  4. Sprinkle flour over the mixture, stirring for about 1-2 minutes.
  5. Pour in apple cider and beef broth, bring to a gentle boil, cooking for a minute or two.
  6. Transfer to an oven-safe pan or keep in the pot, cover, and bake for 1 to 1½ hours.
  7. Boil peeled and chopped potatoes in salted water for 15-20 minutes until fork-tender.
  8. Drain potatoes, add milk, sour cream, and cheddar cheese, then mash until smooth and creamy.
  9. Serve a scoop of mashed potatoes topped with the stew.
