Ingredients
  

  • 2 medium fennel bulbs thinly sliced
  • 2 medium apples such as Granny Smith or Honeycrisp, cored and thinly sliced
  • 1/2 cup walnuts roughly chopped
  • 1/4 cup fresh parsley chopped
  • 1/4 cup crumbled feta cheese optional
  • 1/4 cup olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon orange juice
  • 1 teaspoon honey
  • Salt and pepper to taste

Method
 

  1. In a large bowl, combine the sliced fennel, sliced apples, walnuts, parsley, and feta cheese (if using). Toss gently to mix the ingredients.
  2. In a small bowl or jar, whisk together the olive oil, lemon juice, orange juice, honey, salt, and pepper until well combined.
  3. Drizzle the vinaigrette over the salad and toss gently to coat all the ingredients evenly.
  4. Allow the salad to sit for about 10 minutes to let the flavors meld before serving.
