Step-by-Step Instructions for Open-Faced Fried Egg Quesadilla
  1. Heat a non-stick skillet over medium heat for about 2 minutes. Add olive oil to coat the bottom.
  2. Place the corn tortilla in the skillet and toast for 1 minute until golden brown. Flip and warm the other side for another 30 seconds.
  3. Spread guacamole over the toasted side. Sprinkle chopped cherry tomatoes and grated cheese.
  4. Crack the egg into the center of the tortilla and let the whites set for about 1 minute.
  5. Gently flip the quesadilla over and cook for another 30 seconds to 1 minute, based on yolk preference.
  6. Season with salt and pepper, transfer to a plate, cut into wedges, and serve warm.
