- In a large bowl, cream butter and sugar until light and fluffy. Mix in egg yolk and vanilla.
- Gradually add flour and salt, mixing until a soft dough forms.
- Shape into a log, wrap in plastic, and refrigerate for 1 hour.
- Preheat oven to 350°F (175°C). Slice chilled dough into ¼-inch rounds.
- Place on a parchment-lined baking sheet and sprinkle with sugar if desired.
- Bake for 10–12 minutes or until edges are lightly golden. Cool before serving.
