Ingredients
  

  • 1 cup unsalted butter softened
  • cup granulated sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • Pinch of salt
  • Extra sugar for sprinkling (optional)

Method
 

  1. In a large bowl, cream butter and sugar until light and fluffy. Mix in egg yolk and vanilla.
  2. Gradually add flour and salt, mixing until a soft dough forms.
  3. Shape into a log, wrap in plastic, and refrigerate for 1 hour.
  4. Preheat oven to 350°F (175°C). Slice chilled dough into ¼-inch rounds.
  5. Place on a parchment-lined baking sheet and sprinkle with sugar if desired.
  6. Bake for 10–12 minutes or until edges are lightly golden. Cool before serving.

Notes

  • Chill dough thoroughly to prevent spreading.
  • Add lemon zest or almond extract for a flavor variation.
