  2. While the dough chills, preheat your oven to 400°F (200°C). Peel and slice about 3 large yellow peaches into ½-inch wedges. In a mixing bowl, toss the peach slices with 2 tablespoons of light brown sugar, a pinch of salt, 1 tablespoon of cornstarch, and ½ teaspoon of cinnamon until well coated. Set the filling aside to let the juices meld together while you roll out the dough.
  3. On a floured surface, roll out the chilled dough into a 12-inch circle about 1/8 inch thick. Transfer the crust to a parchment-lined baking sheet, gently pressing it into place.
