Preparation Steps
- Prepare the Peanut Dipping Sauce by whisking together peanut butter, tamari or soy sauce, lime juice, maple syrup, rice vinegar, and chili garlic sauce. Gradually mix in warm water until you reach a creamy consistency.
- Soak the Rice Paper Wrappers in hot water for 8-10 seconds until pliable, then lay flat on a clean surface.
- Assemble the Fresh Spring Rolls by layering a small handful of vermicelli noodles, julienned carrots, cucumber strips, and cilantro leaves in the center of the wrapper.
- Add a small spoonful of peanut sauce over the fillings.
- Roll the Spring Rolls by folding the bottom over the filling, then fold in the sides and continue rolling tightly.
- Repeat the process with remaining wrappers and filling ingredients, keeping finished rolls covered with a damp cloth.
- Serve the spring rolls on a platter with reserved peanut sauce and optional garnishes.
