Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.
In a large bowl, combine the melted butter, minced garlic, Italian herbs, salt, and pepper. Mix well.
Add the halved baby potatoes to the bowl and toss until they are evenly coated with the garlic butter mixture.
Spread the potatoes in a single layer on the prepared baking sheet. Make sure they are cut side down for maximum crispiness.
Roast in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and tender when pierced with a fork.
Remove the potatoes from the oven and sprinkle the grated Parmesan cheese over the top. Return to the oven for an additional 5 minutes, allowing the cheese to melt and become slightly crispy.
Once done, remove from the oven and garnish with fresh parsley before serving.
