For the Potatoes
  • 1 pound Yukon Gold Potatoes Can also use red or fingerling potatoes
  • 2 tablespoons Ghee or Butter Swap with ghee for lactose-free
For Flavor
  • 4 cloves Garlic Cloves Fresh is best, powder can work in a pinch
  • 1 teaspoon Dried Thyme Oregano can be an easy replacement
  • 1 teaspoon Dried Oregano Can switch for Italian seasoning
  • 1 tablespoon Olive Oil Avocado oil is a great alternative

Method
 

Cooking Steps
  1. Heat a large cast-iron skillet over medium heat. Add olive oil and ghee, allowing it to melt.
  2. Add cubed Yukon Gold potatoes, seasoning with garlic, thyme, oregano, salt, and pepper. Sauté for 8-10 minutes until golden brown.
  3. Increase heat to medium-high, add remaining ghee and sirloin steak, season with salt and pepper. Sear for 2 minutes without stirring, then cook for an additional 1-2 minutes.
  4. Fold the potatoes back in with the steak, adjust seasoning if needed, and garnish with fresh parsley before serving.
