Preheat your oven to 400°F (200°C).
In a large bowl, toss the halved baby potatoes with 1 tablespoon of olive oil, salt, and pepper. Spread them out on a baking sheet in a single layer.
Roast the potatoes in the preheated oven for about 20-25 minutes, or until they are golden brown and tender.
While the potatoes are roasting, season the steak bites with salt and pepper.
In a large skillet, heat the remaining tablespoon of olive oil over medium-high heat. Add the steak bites in a single layer and sear for about 2-3 minutes on each side until browned. Cook in batches if necessary to avoid overcrowding the pan.
Reduce the heat to medium and add the butter, minced garlic, thyme, and rosemary to the skillet. Stir to combine and cook for an additional 2-3 minutes until the garlic is fragrant and the steak bites are cooked to your desired doneness.
Remove the skillet from heat and toss the cooked steak bites with the garlic butter sauce.
Serve the steak bites alongside the roasted potatoes, garnished with fresh parsley.
