Ingredients
  

  • 1 whole chicken 4–5 lb
  • 1/2 cup butter softened
  • 4 garlic cloves minced
  • 1 tablespoon chopped parsley
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 lemon halved
  • 1 onion quartered

Method
 

  1. Preheat oven to 425°F
  2. Mix butter with garlic, herbs, salt, and pepper
  3. Pat chicken dry and rub herb butter under skin and over top
  4. Stuff cavity with lemon and onion
  5. Place chicken in roasting pan and roast for 1 hour 15 minutes or until internal temp reaches 165°F
  6. Rest for 10 minutes before carving
