Method
- Preheat oven to 425°F
- Mix butter with garlic, herbs, salt, and pepper
- Pat chicken dry and rub herb butter under skin and over top
- Stuff cavity with lemon and onion
- Place chicken in roasting pan and roast for 1 hour 15 minutes or until internal temp reaches 165°F
- Rest for 10 minutes before carving
Notes
- Baste with pan juices halfway through for extra flavor
- Serve with roasted vegetables or mashed potatoes
- Great for holidays or Sunday dinners
