  • 1 head Garlic halved
  • 1 whole Lemon quartered

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C).
  2. Rinse the whole chicken under cold water and pat dry thoroughly.
  3. Place the chicken in the roasting pan, breast-side up.
  4. Combine olive oil, melted butter, and fresh lemon juice in a bowl. Whisk until blended, then pour over the chicken.
  5. Sprinkle the chicken with salt, pepper, and chopped parsley inside and out.
  6. Mix softened butter with minced garlic, rosemary, thyme, lemon zest, and paprika. Rub the mixture all over the chicken.
  7. Stuff the cavity with halved garlic, quartered lemon, and herb sprigs. Tie the legs together.
  8. Roast the chicken in the oven for approximately 1 hour 15-25 minutes, basting halfway.
  9. Switch to broil mode for an additional 2-3 minutes for crispiness.
  10. Let the chicken rest for 15 minutes before serving.
