- Rinse the whole chicken under cold water and pat dry thoroughly.
- Place the chicken in the roasting pan, breast-side up.
- Combine olive oil, melted butter, and fresh lemon juice in a bowl. Whisk until blended, then pour over the chicken.
- Sprinkle the chicken with salt, pepper, and chopped parsley inside and out.
- Mix softened butter with minced garlic, rosemary, thyme, lemon zest, and paprika. Rub the mixture all over the chicken.
- Stuff the cavity with halved garlic, quartered lemon, and herb sprigs. Tie the legs together.
- Roast the chicken in the oven for approximately 1 hour 15-25 minutes, basting halfway.
- Switch to broil mode for an additional 2-3 minutes for crispiness.
- Let the chicken rest for 15 minutes before serving.
