  • 2 boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried oregano or thyme
  • Juice of 1/2 lemon

Method
 

  1. Prepare the Chicken: Place the chicken breasts on a cutting board and pound them to an even thickness using a meat mallet or rolling pin.
  2. Season: Rub the chicken with olive oil, then season both sides with garlic powder, onion powder, smoked paprika, salt, pepper, and dried oregano.
  3. Preheat the Griddle: Heat a griddle pan or flat-top griddle over medium-high heat. Lightly grease with a little oil.
  4. Cook: Place the chicken breasts on the hot griddle and cook for 4-5 minutes on each side until golden brown and cooked through (internal temperature of 165°F/75°C).
  5. Rest & Serve: Remove from heat, squeeze fresh lemon juice over the chicken, and let it rest for 5 minutes before slicing. Serve hot with your favorite sides.
