Ingredients
  

  • 4 boneless skinless chicken breasts (or thighs)
  • 1.5 lbs baby potatoes halved or quartered
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
For the Garlic Parmesan Sauce:
  • 4 tablespoons unsalted butter melted
  • 5 cloves garlic minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • ½ teaspoon red pepper flakes optional
For Garnish:
  • Fresh parsley chopped

Method
 

  1. Season the Chicken and Potatoes – Toss the potatoes with olive oil, salt, pepper, and paprika. Season the chicken with salt, pepper, and Italian seasoning.
  2. Layer in the Crockpot – Place the potatoes at the bottom of the crockpot and lay the chicken on top.
  3. Make the Sauce – In a bowl, whisk together the melted butter, minced garlic, heavy cream, Parmesan cheese, thyme, rosemary, and red pepper flakes.
  4. Cook – Pour the sauce over the chicken and potatoes. Cover and cook on low for 4-6 hours or high for 2-3 hours, until the chicken is tender.
  5. Garnish and Serve – Sprinkle with fresh parsley before serving. Enjoy with steamed vegetables or a side salad.

Notes

    • For extra crispy chicken, sear the chicken in a hot skillet for 2-3 minutes per side before adding it to the crockpot.
