Method
- Preheat oven to 350°F (175°C). Line baking sheet with parchment.
- Cream butter, sugar, and molasses until light. Add egg and beat well.
- In another bowl, whisk together flour, baking soda, spices, and salt.
- Gradually mix dry ingredients into wet until dough forms.
- Roll dough into 1-inch balls and coat in sugar.
- Place on baking sheet and bake 8–10 minutes.
- Let cool on pan for 5 minutes, then transfer to rack.
Notes
- Dough can be chilled for extra thick cookies.
- Great with a drizzle of icing or dipped in white chocolate.
