  • 2 ripe avocados
  • 4 large eggs
  • 4 slices of whole grain bread
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes optional
  • Fresh herbs such as cilantro or parsley for garnish

Method
 

  1. Begin by boiling the eggs. Place the eggs in a pot and cover them with cold water. Bring the water to a boil over medium-high heat. Once boiling, cover the pot, remove it from heat, and let it sit for 12 minutes.
  2. While the eggs are cooking, toast the slices of whole grain bread until golden brown.
  3. After the eggs have finished cooking, transfer them to a bowl of ice water to cool for about 5 minutes. Once cooled, peel the eggs and use a grater to grate them into a bowl.
  4. In a separate bowl, mash the ripe avocados with lemon juice, salt, and black pepper until smooth but still slightly chunky.
  5. Spread the mashed avocado mixture evenly over the toasted bread slices.
  6. Top each slice of avocado toast with a generous amount of grated egg.
  7. Sprinkle red pepper flakes on top if desired, and garnish with fresh herbs.
  8. Serve immediately and enjoy your delicious avocado toast!
