Ingredients
  

  • 2 pounds boneless skinless chicken thighs, cut into 1-inch pieces
  • 1/4 cup olive oil
  • 3 tablespoons lemon juice
  • 2 teaspoons dried oregano
  • 2 teaspoons garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes optional
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 tablespoon butter
  • Zest of 1 lemon
  • Fresh parsley chopped (for garnish)

Method
 

  1. In a large bowl, combine olive oil, lemon juice, oregano, garlic powder, salt, black pepper, and red pepper flakes. Add the chicken pieces and toss to coat. Cover and marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.
  2. While the chicken is marinating, prepare the lemon rice. In a medium saucepan, bring chicken broth to a boil. Add the rice and butter, then reduce heat to low, cover, and simmer for 15 minutes or until rice is tender and liquid is absorbed. Remove from heat, stir in lemon zest, and let it sit covered for 5 minutes.
  3. Preheat your grill or grill pan to medium-high heat. Thread the marinated chicken onto skewers, leaving a little space between each piece.
  4. Grill the chicken skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  5. Serve the chicken skewers over the lemon rice, garnished with chopped parsley.
