  • 8 ounces rotini pasta
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 cup red bell pepper diced
  • 1/4 cup red onion finely chopped
  • 1/4 cup fresh parsley chopped
  • 1/4 cup fresh basil chopped
  • 1/2 cup green goddess dressing
  • Salt and pepper to taste
  • 1/4 cup feta cheese crumbled (optional)

Method
 

  1. Cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
  2. In a large mixing bowl, combine the cooled pasta, cherry tomatoes, cucumber, red bell pepper, red onion, parsley, and basil.
  3. Pour the green goddess dressing over the pasta and vegetables. Toss gently to combine, ensuring everything is well coated.
  4. Season with salt and pepper to taste. If using, sprinkle the feta cheese on top and gently mix it in.
  5. Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld. Serve chilled or at room temperature.
