- Preheat your grill or grill pan to high heat, aiming for around 450°F to 500°F, for about 10-15 minutes.
- Slice your ripe cantaloupe in half, remove the seeds, and cut it into thick wedges or spears. Brush each piece generously with olive oil.
- Sprinkle tajin seasoning evenly across each piece of cantaloupe.
- Carefully place the seasoned cantaloupe wedges on the hot grill and grill each side for 3 to 4 minutes.
- Remove the cantaloupe from the grill and let it rest for about 3 minutes before drizzling with honey.
- Sprinkle additional tajin or flaky sea salt over your grilled cantaloupe before serving.
