Preheat your grill or grill pan over medium-high heat.
In a large bowl, combine the chicken pieces, olive oil, garlic powder, onion powder, paprika, salt, and pepper. Toss until the chicken is well coated.
If using wooden skewers, soak them in water for 30 minutes beforehand to prevent burning.
Grill the chicken bites for about 8-10 minutes, turning occasionally, until they are cooked through and have nice grill marks.
While the chicken is grilling, prepare the creamy garlic sauce by mixing together the mayonnaise, sour cream, minced garlic, lemon juice, dill, salt, and pepper until smooth.
Once the chicken is done, remove it from the grill and let it rest for a few minutes.
Serve the grilled chicken bites with the creamy garlic sauce on the side for dipping.
