  • 4 boneless skinless chicken breasts (about 1.5 pounds)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 6 cups mixed salad greens such as spinach, arugula, and romaine
  • 1 cup fresh blueberries
  • 1/2 cup crumbled feta cheese
  • 1/4 cup sliced almonds
  • 1/4 cup red onion thinly sliced
  • 1/4 cup balsamic vinaigrette

Method
 

  1. Preheat your grill to medium-high heat. In a small bowl, mix together garlic powder, onion powder, smoked paprika, salt, and pepper. Rub the spice mixture onto both sides of the chicken breasts.
  2. Drizzle olive oil over the seasoned chicken breasts and place them on the grill. Cook for about 6-7 minutes on each side or until the internal temperature reaches 165°F. Remove from the grill and let rest for 5 minutes before slicing.
  3. In a large salad bowl, combine the mixed greens, blueberries, feta cheese, sliced almonds, and red onion.
  4. Slice the grilled chicken and arrange it on top of the salad. Drizzle with balsamic vinaigrette and toss gently to combine.
  5. Serve immediately and enjoy your fresh and vibrant salad!
