  • 1 medium Eggplant sliced into ½-¾ inch rounds
  • 2 large Tomatoes sliced into ½ inch thick pieces
  • 8 ounces Mozzarella Cheese fresh
  • to taste tablespoon Pesto optional
  • to taste leaves Basil for garnish

Method
 

Step-by-Step Instructions
  1. Prepare garlic oil by mixing minced garlic, oil, salt, and pepper and let it infuse for 30-60 minutes.
  2. Preheat grill to medium heat (375°F). Brush eggplant slices with garlic oil and season with salt and pepper.
  3. Wash and slice tomatoes, then brush with remaining garlic oil.
  4. Grill the eggplant for 3-4 minutes on one side, then flip and place tomatoes on the grill for 30-45 seconds.
  5. Layer grilled eggplant with sliced tomatoes on a serving plate and add mozzarella on top.
  6. Cover the grill lid and cook for an additional 2-3 minutes until cheese is slightly melted.
  7. Drizzle with pesto and garnish with basil before serving.
