Preheat your grill to medium-high heat.
In a small bowl, mix together the brown sugar, cinnamon, and salt.
Brush both sides of the pineapple rings with honey and lime juice.
Sprinkle the brown sugar mixture evenly over both sides of the pineapple rings.
Place the pineapple rings on the grill and cook for about 3-4 minutes on each side, or until grill marks appear and the pineapple is caramelized.
If using, sprinkle shredded coconut over the pineapple during the last minute of grilling.
Remove the grilled pineapple from the grill and let it cool slightly before serving.
Serve warm, optionally topped with a scoop of vanilla ice cream.
