Ingredients
  

  • 4 salmon fillets
  • 1 cup fresh pineapple chunks or canned, drained
  • ¼ cup soy sauce
  • ¼ cup honey
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • 1 teaspoon garlic minced
  • 1 teaspoon ginger grated
  • ½ teaspoon red pepper flakes optional for spice
  • Salt and black pepper to taste
  • 2 green onions chopped (for garnish)
  • 1 tablespoon sesame seeds optional

Method
 

  1. Preheat the oven to 375°F (190°C). Line a baking dish with parchment paper.
  2. Prepare the marinade: In a bowl, mix soy sauce, honey, olive oil, lime juice, garlic, ginger, and red pepper flakes.
  3. Marinate the salmon: Place salmon fillets in the baking dish. Pour the marinade over them, ensuring even coating. Let sit for 10 minutes.
  4. Add pineapple: Scatter pineapple chunks around and on top of the salmon.
  5. Bake: Place the dish in the oven and bake for 18-20 minutes, or until salmon is flaky and cooked through.
