For the Sweet Potatoes
  • 3 large Sweet Potatoes can substitute with butternut squash
  • 2 tablespoons Olive Oil or avocado oil
  • 1 teaspoon Kosher Salt reduce if using table salt
For the Creamy Herb Yogurt Dressing
  • 1 cup Greek Yogurt or dairy-free yogurt for vegan option
  • 2 tablespoons Green Onions or shallots
  • 2 tablespoons Fresh Dill or parsley/cilantro
  • 2 cloves Garlic or roasted garlic
  • 1/4 cup Fresh Basil Leaves or mint for variation
  • 2 tablespoons Lemon Juice or vinegar for acidity

Method
 

Grilling Instructions
  1. Preheat the grill to medium-high heat, around 400°F (204°C).
  2. Peel the sweet potatoes and cut them into 1½-inch thick wedges or rounds.
  3. Drizzle the sweet potato pieces with olive oil and sprinkle with kosher salt. Toss until evenly coated.
  4. Grill sweet potato wedges cut-side down for about 15 minutes, turning every 2–3 minutes until fork-tender.
  5. Blend Greek yogurt, green onions, dill, garlic, basil, lemon juice, and a pinch of salt until smooth.
  6. Serve grilled sweet potatoes drizzled with the herbed yogurt dressing and garnish with additional herbs.
