Grilling Instructions
- Preheat the grill to medium-high heat, around 400°F (204°C).
- Peel the sweet potatoes and cut them into 1½-inch thick wedges or rounds.
- Drizzle the sweet potato pieces with olive oil and sprinkle with kosher salt. Toss until evenly coated.
- Grill sweet potato wedges cut-side down for about 15 minutes, turning every 2–3 minutes until fork-tender.
- Blend Greek yogurt, green onions, dill, garlic, basil, lemon juice, and a pinch of salt until smooth.
- Serve grilled sweet potatoes drizzled with the herbed yogurt dressing and garnish with additional herbs.
