Steps to Prepare
- Preheat your oven to 325°F (160°C) to ensure even baking.
- Combine graham cracker crumbs, granulated sugar, and melted unsalted butter in a bowl. Press firmly into the bottom of the springform pan. Bake for 8-10 minutes and let cool.
- Beat cream cheese and granulated sugar until light and fluffy, about 3-4 minutes. Incorporate sour cream and vanilla, then add eggs one at a time.
- In a saucepan, combine heavy cream, brown sugar, and butter. Simmer until thickened, about 5 minutes. Divide and color one half green and the other purple.
- Pour the cheesecake filling over the cooled crust. Drizzle the green and purple mixtures on top and swirl gently with a toothpick.
- Bake for 50-60 minutes until edges are set but center remains wobbly.
- Turn off the oven and crack the door open. Let it cool gradually in the oven for about an hour.
- Transfer to the fridge for at least 4 hours or overnight to set.
- Add extra swirls on top and a sprinkle of edible glitter before serving. Slice and enjoy!
