Method
 

Steps to Prepare
  1. Preheat your oven to 325°F (160°C) to ensure even baking.
  2. Combine graham cracker crumbs, granulated sugar, and melted unsalted butter in a bowl. Press firmly into the bottom of the springform pan. Bake for 8-10 minutes and let cool.
  3. Beat cream cheese and granulated sugar until light and fluffy, about 3-4 minutes. Incorporate sour cream and vanilla, then add eggs one at a time.
  4. In a saucepan, combine heavy cream, brown sugar, and butter. Simmer until thickened, about 5 minutes. Divide and color one half green and the other purple.
  5. Pour the cheesecake filling over the cooled crust. Drizzle the green and purple mixtures on top and swirl gently with a toothpick.
  6. Bake for 50-60 minutes until edges are set but center remains wobbly.
  7. Turn off the oven and crack the door open. Let it cool gradually in the oven for about an hour.
  8. Transfer to the fridge for at least 4 hours or overnight to set.
  9. Add extra swirls on top and a sprinkle of edible glitter before serving. Slice and enjoy!
