Ingredients
  

  • 3 cups fresh pineapple diced
  • 2 cups strawberries hulled and sliced
  • 2 cups kiwi peeled and sliced
  • 1 cup blueberries
  • 1 cup mandarin oranges drained
  • 1 cup shredded coconut sweetened or unsweetened
  • 1/4 cup honey
  • 1 tablespoon fresh lime juice
  • 1 tablespoon fresh mint chopped (optional for garnish)

Method
 

  1. In a large mixing bowl, combine the diced pineapple, sliced strawberries, sliced kiwi, blueberries, and mandarin oranges.
  2. In a small bowl, whisk together the honey and lime juice until well combined.
  3. Drizzle the honey-lime mixture over the fruit and gently toss to coat all the fruit evenly.
  4. Add the shredded coconut and toss again to combine.
  5. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
  6. Before serving, give the salad a gentle stir and garnish with fresh mint if desired.
