  • to taste black pepper fresh ground recommended
  • 3/4 cup diced ham about 4 oz; turkey ham as substitute
  • 1/2 cup diced pineapple use fresh or canned (drained)
  • 1/2 cup diced tomatoes moisture can be reduced based on preference
  • 2 teaspoons unsalted butter can be swapped with olive oil for dairy-free
  • 1/2 cup shredded cheddar cheese choose sharp or mild based on preference

Method
 

Cooking Instructions
  1. Crack the 6 large eggs into a mixing bowl, season with salt and black pepper, and whisk until smooth and well combined, about 1-2 minutes.
  2. Gently fold in the diced ham, diced pineapple, and diced tomatoes into the egg mixture.
  3. Heat a medium nonstick skillet over medium heat, add 2 teaspoons of unsalted butter, and swirl until it fully coats the skillet.
  4. Pour the egg mixture into the skillet, spreading it evenly. Cook undisturbed for about 1 minute, then gently stir for another 5-7 minutes until the eggs set and remain moist.
  5. Remove the skillet from heat, sprinkle ½ cup of shredded cheddar cheese over the eggs, and fold it in gently.
  6. Serve immediately while warm, best enjoyed fresh alongside toasted bread or fresh fruit.
