- Crack the 6 large eggs into a mixing bowl, season with salt and black pepper, and whisk until smooth and well combined, about 1-2 minutes.
- Gently fold in the diced ham, diced pineapple, and diced tomatoes into the egg mixture.
- Heat a medium nonstick skillet over medium heat, add 2 teaspoons of unsalted butter, and swirl until it fully coats the skillet.
- Pour the egg mixture into the skillet, spreading it evenly. Cook undisturbed for about 1 minute, then gently stir for another 5-7 minutes until the eggs set and remain moist.
- Remove the skillet from heat, sprinkle ½ cup of shredded cheddar cheese over the eggs, and fold it in gently.
