Ingredients

  • 2 cups rolled oats
  • 1/2 cup milk dairy or non-dairy
  • 3 large eggs beaten
  • 2 tablespoons melted butter or olive oil
  • 1/3 cup honey
  • 1/2 cup whole-fat plain yogurt
  • 1/2 teaspoon vanilla extract
  • 3/4 teaspoon salt
  • 1 cup blueberries divided
  • 1 cup raspberries divided

Method

Preheat the oven:
  1. Preheat your oven to 375°F (190°C). Grease a 9x9-inch baking dish with butter or line it with parchment paper.
Combine the ingredients:
  1. In a large mixing bowl, add the oats, milk, eggs, melted butter, honey, yogurt, vanilla extract, and salt. Stir everything thoroughly using a fork or whisk until well combined.
Fold in the berries:
  1. Gently fold 3/4 cup each of blueberries and raspberries into the mixture. Be careful to avoid crushing the berries.
Transfer to the baking dish:
  1. Pour the mixture into the prepared baking dish and spread it evenly. Sprinkle the remaining berries on top for a beautiful finish.
Bake:
  1. Place the dish in the oven and bake for 45 minutes or until the top is firm, shiny, and slightly golden.
Cool and serve:
  1. Let the baked oatmeal cool for a few minutes before slicing and serving. Enjoy it warm, or store it for later use.

Notes

  • Storage: Allow the baked oatmeal to cool completely, then cover and refrigerate for up to five days.
  • Freezing: Wrap individual portions tightly in plastic wrap and store them in a freezer-safe container for up to three months. Reheat in the microwave or oven before serving.
  • Customization: Add nuts, seeds, or a pinch of cinnamon for extra flavor. Swap honey with maple syrup if preferred.
  • Serving Suggestions: Serve as-is, or top with a dollop of Greek yogurt, fresh fruit, or a drizzle of maple syrup for added indulgence.
