  • 4 salmon fillets 6 oz each
  • 1/4 cup olive oil
  • 3 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cherry tomatoes halved
  • 1/2 cup Kalamata olives pitted and sliced
  • 1/4 cup red onion thinly sliced
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons fresh parsley chopped
  • 1 lemon sliced (for garnish)

Method
 

Prepare the Salmon:
  1. Preheat your oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper or foil for easy cleanup.
  3. Pat the salmon fillets dry with a paper towel and place them on the prepared baking sheet.
Make the Marinade:
  1. In a small bowl, whisk together olive oil, garlic, oregano, paprika, salt, and black pepper.
  2. Brush the marinade evenly over the salmon fillets, ensuring each fillet is well coated.
Add the Mediterranean Toppings:
  1. Scatter the cherry tomatoes, sliced olives, and red onion around the salmon on the baking sheet.
  2. Sprinkle crumbled feta cheese over the salmon and vegetables.
Bake the Salmon:
  1. Place the baking sheet in the preheated oven and bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
  2. For a golden finish, broil the dish for 2-3 minutes after baking.
Garnish and Serve:
  1. Remove the baking sheet from the oven and sprinkle fresh parsley over the salmon and vegetables.
