Ingredients
  

  • 2 cups fresh spinach chopped
  • 1 cup feta cheese crumbled
  • 4 medium-sized tortillas flour, whole wheat, or gluten-free
  • 2 tablespoons olive oil or butter for cooking

  • ¼ cup sun-dried tomatoes chopped
  • ¼ cup black olives sliced
  • ½ cup grilled chicken diced

Method
 

  1. Prepare the Ingredients
  2. Rinse and chop the spinach.
  3. Crumble the feta cheese into a bowl.
  4. Prepare any additional add-ins, such as sun-dried tomatoes, olives, or grilled chicken.
  5. Assemble the Quesadillas
  6. Lay a tortilla flat and spread a portion of the chopped spinach and crumbled feta over one half.
  7. Add any desired optional ingredients on top.
  8. Fold the tortilla in half, pressing gently to secure the filling.
  9. Cook the Quesadillas
  10. Heat a non-stick skillet over medium heat and add a small amount of olive oil or butter.
  11. Place the folded quesadilla in the skillet and cook for 2-3 minutes until golden brown and crispy.
  12. Flip and cook for another 2-3 minutes on the other side.
  13. Slice and Serve
  14. Remove the quesadilla from the skillet and let it cool for a minute.
  15. Slice into wedges and serve warm with your favorite dips like tzatziki, hummus, or marinara sauce.
