Ingredients
  

  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup cooked brown rice
  • 1 can 15 ounces black beans, rinsed and drained
  • 1 cup corn frozen or canned
  • 1 cup diced tomatoes fresh or canned
  • 1 avocado diced
  • 1 cup shredded lettuce
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup fresh cilantro chopped
  • Lime wedges for serving

Method
 

  1. In a large skillet, heat the olive oil over medium heat. Add the ground turkey and cook until browned, about 5-7 minutes.
  2. Stir in the chili powder, cumin, garlic powder, onion powder, salt, and pepper. Cook for an additional 2-3 minutes until the spices are fragrant.
  3. In a large bowl, layer the cooked brown rice as the base.
  4. Top the rice with the seasoned turkey, black beans, corn, diced tomatoes, avocado, shredded lettuce, and cheddar cheese.
  5. Garnish with fresh cilantro and serve with lime wedges on the side.
