Ingredients
  

  • 1 lb beef stew meat
  • 1 tbsp olive oil
  • 1 onion chopped
  • 2 garlic cloves minced
  • 3 carrots sliced
  • 2 celery stalks sliced
  • 1/2 cup pearl barley
  • 6 cups beef broth
  • 1 tsp thyme
  • 1 bay leaf
  • Salt and pepper to taste

Method
 

  1. In a large pot, brown beef in olive oil. Remove and set aside.
  2. Sauté onion, garlic, carrots, and celery until softened.
  3. Return beef to the pot. Add barley, broth, thyme, bay leaf, salt, and pepper.
  4. Bring to a boil, then reduce to a simmer for 1 to 1.5 hours, until beef is tender and barley is cooked.
  5. Remove bay leaf and serve hot.

Notes

  • Leftovers taste even better the next day. Add mushrooms or potatoes for variation.
