Method
- Prepare the Ingredients: Add chicken, broth, carrots, potatoes, celery, onion, garlic, salt, pepper, thyme, rosemary, tomato paste, and Worcestershire sauce to the slow cooker.
- Cook Low & Slow: Cover and cook on low for 6–8 hours or high for 3–4 hours, until the chicken is tender and vegetables are soft.
- Thicken the Stew (Optional): If a thicker stew is desired, stir in the cornstarch slurry and cook for another 15 minutes.
- Finish & Serve: Stir in frozen peas and let them warm through. Garnish with fresh parsley and serve hot.
Notes
- Swap potatoes for sweet potatoes for a slightly sweeter taste.
- For extra depth, add a splash of heavy cream at the end.
- Serve with crusty bread or over rice for a heartier meal.
