This Slow Cooker Chicken Stew is a hearty and comforting meal, packed with tender chicken, vegetables, and a flavorful broth. It’s the perfect set-it-and-forget-it dish for busy days, filling your home with delicious aromas while it simmers to perfection!

Ingredients
  

  • 1 ½ lbs boneless skinless chicken thighs or breasts, cut into chunks
  • 3 cups chicken broth
  • 3 carrots sliced
  • 3 potatoes diced
  • 2 celery stalks chopped
  • 1 onion diced
  • 3 cloves garlic minced
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tbsp tomato paste
  • 1 tsp Worcestershire sauce
  • 1 cup frozen peas added at the end
  • 2 tbsp cornstarch mixed with 2 tbsp water optional, for thickening
  • Fresh parsley for garnish

Method
 

  1. Prepare the Ingredients: Add chicken, broth, carrots, potatoes, celery, onion, garlic, salt, pepper, thyme, rosemary, tomato paste, and Worcestershire sauce to the slow cooker.
  2. Cook Low & Slow: Cover and cook on low for 6–8 hours or high for 3–4 hours, until the chicken is tender and vegetables are soft.
  3. Thicken the Stew (Optional): If a thicker stew is desired, stir in the cornstarch slurry and cook for another 15 minutes.
  4. Finish & Serve: Stir in frozen peas and let them warm through. Garnish with fresh parsley and serve hot.

Notes

  • Swap potatoes for sweet potatoes for a slightly sweeter taste.
  • For extra depth, add a splash of heavy cream at the end.
  • Serve with crusty bread or over rice for a heartier meal.
