Method
- In a large pot, brown ground beef with onion and garlic. Drain excess fat.
- Add carrots, potatoes, tomatoes, broth, and seasoning.
- Bring to a boil, then reduce heat and simmer 30–40 minutes until vegetables are tender.
- Taste and adjust seasoning as needed. Serve hot.
Notes
- Add corn or green beans for more veggies.
- Leftovers are great the next day!
