Step-by-Step Instructions for xican Pinto Bean Soup
- Warm 2 tablespoons of olive oil in a large pot over medium-high heat. Add 1 diced onion and sauté for 4-5 minutes until translucent.
- Stir in one can of fire-roasted tomatoes, 3 minced garlic cloves, 2 diced carrots, and 1 diced potato. Cook for 1-2 minutes until fragrant.
