Step-by-Step Instructions
  1. Heat the oil in a medium pot over medium heat for about 1-2 minutes until shimmering.
  2. Add minced ginger and garlic, sauté for 2 minutes until fragrant and golden.
  3. Increase heat to medium-high, add ground beef, and cook for 5 minutes until browned.
  4. Stir in tomato paste and cook for an additional 2 minutes to deepen flavor.
  5. Pour in chicken stock, sugar, salt, white pepper, and vinegar; bring to simmer.
  6. Incorporate enoki mushrooms and white parts of scallions, simmer for 15 minutes until mushrooms are tender.
  7. Taste and adjust seasoning, garnish with green parts of scallions before serving.
