Ingredients
  

Bottom Crust Layer:
  • 1 cup all-purpose flour
  • ½ cup unsalted butter
  • 2 tablespoons water
Filling:
  • 1 cup water
  • ½ cup unsalted butter
  • 1 cup all-purpose flour
  • 3 large eggs
  • 3 tablespoons powdered sugar
  • ½ teaspoon almond extract
Frosting:
  • 1 ½ cups powdered sugar
  • 1 tablespoon unsalted butter softened
  • ½ teaspoon almond extract
  • 1-2 tablespoons milk

Method
 

  1. Prepare the Crust: In a mixing bowl, combine flour and butter until crumbly. Add water and mix until a dough forms. Press into two 12x3-inch strips on an ungreased baking sheet.
  2. Make the Choux Pastry Layer: In a saucepan, bring water and butter to a boil. Remove from heat and stir in flour until a smooth dough forms. Let cool slightly, then beat in eggs one at a time until the mixture is smooth and glossy. Stir in powdered sugar and almond extract.
  3. Assemble and Bake: Spread the choux pastry evenly over the crust. Bake at 350°F (175°C) for about 1 hour or until golden brown. Let cool completely.
  4. Make the Frosting: Whisk together powdered sugar, softened butter, almond extract, and milk until smooth. Adjust consistency as needed.
  5. Glaze and Serve: Drizzle the frosting over the cooled pastry. Let set before slicing and serving.

    • Ensure the butter is cold for the crust to create the perfect flaky texture.
    • Let the choux dough cool slightly before adding eggs to prevent them from scrambling.
    • The pastry must be fully cooled before frosting to prevent the glaze from melting.
