- Combine chicken thighs with salt, garlic powder, sweet paprika, curry powder, and Greek yogurt in a bowl. Marinate for at least 15 minutes.
- Heat vegetable oil in a large skillet over medium-high heat and sear marinated chicken thighs for 8-10 minutes. Remove and set aside.
- Melt butter in the skillet and sauté minced garlic and diced onion for 3-4 minutes until translucent.
- Pour tomato sauce and add sugar, simmer for 2-3 minutes, then return chicken to skillet and coat in sauce.
- Reduce heat, stir in heavy cream, cayenne pepper, and garam masala. Simmer for 10 minutes until thickened.
- Stir in cold butter before serving and garnish with parsley or cilantro. Serve warm with naan and rice.
