Method
 

Mixing and Baking
  1. In a large mixing bowl, combine warm water and yeast. Let it sit for 5-10 minutes until foamy.
  2. Add bread flour, brown sugar, and salt. Mix until dough is sticky.
  3. Knead the dough for 6-8 minutes on a floured surface until smooth.
  4. Place in a greased bowl, cover, and let rise for 1 hour.
  5. For the topping, mix melted butter, brown sugar, cinnamon, and flour in a bowl until crumbly.
  6. Punch down the dough, divide into 12 pieces, roll into balls, and shape into bagels.
  7. Let shaped bagels rest on a baking sheet for 10 minutes.
  8. Boil water with honey, cook bagels for 45 seconds on each side.
  9. Preheat oven to 425°F. Brush with egg wash, sprinkle topping, and bake for 20-25 minutes.
  10. Cool on a wire rack for 10-15 minutes before serving.
