  • 1 cup Water for blending
  • 2 tablespoons Oil any neutral oil
  • 1 medium Shallot or onion
For the Flavor
  • 2 tablespoons Vegan Fish Sauce or soy sauce
  • 1 tablespoon Granulated Sugar adjust to taste
  • 1 tablespoon Mushroom Seasoning or soy sauce
  • 1 teaspoon Onion Powder or fresh onion
  • 1 teaspoon Salt adjust to preference
  • 1/2 teaspoon Black Peppercorns or ground pepper
For Structure
  • 1 teaspoon Baking Powder essential for texture
  • 200 grams Vital Wheat Gluten not gluten-free

Method
 

Preparation
  1. Blend the firm tofu, water, oil, shallot, vegan fish sauce, granulated sugar, mushroom seasoning, onion powder, salt, and baking powder until smooth.
  2. Transfer the mixture to a bowl, stir in vital wheat gluten and black peppercorns, then knead for 3-5 minutes until sticky and elastic.
  3. Shape the dough into a log, wrap it in parchment paper tightly, then double-wrap in aluminum foil.
  4. Steam the wrapped log for 1 hour and 30 minutes, checking the water level periodically.
  5. Remove the log from the steamer and let it cool for 30 minutes before unwrapping.
