Ingredients
  

For the Syrup
  • 1/2 cup honey Can substitute with maple syrup or agave for a different flavor.
  • 1/2 cup water Use filtered for best results.
  • 1 handful fresh thyme Dried thyme may work but fresh is better.
For the Mocktail
  • 1/4 cup lemon juice Freshly squeezed is best.
  • 2 cups sparkling water Swap with still water or lemonade if desired.
For Garnishing
  • as needed ice cubes Make with lemon juice or herbs for added flair.
  • as needed frozen lemon slices Add visual appeal and extra flavor.
  • as needed thyme sprigs For an elegant touch.

Method
 

Make the Syrup
  1. In a small saucepan, combine half a cup of honey and half a cup of water over medium heat. Stir until fully dissolved, then add fresh thyme and simmer for about 5 minutes before cooling.
Prepare the Mocktail Base
  1. In a large glass or mixing pitcher, pour in 1/4 cup of freshly squeezed lemon juice and 1/2 cup of cooled syrup. Mix well to combine.
Add the Sparkling Water
  1. Just before serving, gently stir in 2 cups of chilled sparkling water into the mixture.
Serve the Mocktail
  1. Fill glasses with ice, pour the mocktail mixture over the ice and garnish with frozen lemon slices and thyme sprigs.
