Ingredients
  

  • 1 lb shrimp peeled and deveined
  • 2 tablespoons honey
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon salt
  • 4 cups mixed greens
  • 1/2 cup cherry tomatoes halved
  • 1/2 avocado sliced
  • 1/4 cup red onion thinly sliced
  • Fresh cilantro for garnish

Method
 

  1. In a bowl, whisk together honey, lime juice, olive oil, chili powder, and salt.
  2. Add shrimp and marinate for 10–15 minutes.
  3. Cook shrimp in a skillet over medium heat for 2–3 minutes per side until pink.
  4. In a large bowl, assemble greens, tomatoes, avocado, and onion.
  5. Top with warm shrimp and garnish with cilantro.

Notes

  • Grill shrimp for a smoky flavor.
  • Use pre-cooked shrimp to save time.
  • Double the marinade to use as a dressing.
