Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
In a small bowl, whisk together the honey, Dijon mustard, olive oil, lemon juice, garlic powder, salt, and pepper until well combined.
Place the salmon fillets on the prepared baking sheet, skin-side down. Brush the honey mustard mixture generously over the top of each fillet.
Bake in the preheated oven for 12-15 minutes, or until the salmon flakes easily with a fork and is cooked through.
Remove from the oven and let it rest for a couple of minutes. Garnish with chopped parsley before serving.
