- In a large mixing bowl, combine all-purpose flour, granulated sugar, and a pinch of salt. Cut in the cold unsalted butter until the mixture resembles coarse crumbs. Gradually add ice water, mixing until the dough just comes together. Divide into discs, wrap, and chill for 2 hours.
- While the dough chills, peel, core, and slice your apples, tossing them with lemon juice, brown sugar, cornstarch, cinnamon, nutmeg, and allspice.
- Preheat oven to 375°F (190°C) and grease a baking sheet. Roll out the larger disc of dough to fit your pan, transfer it, and pour in the apple filling.
