Preparation Steps
- In a mixing bowl, combine shredded cooked chicken, mashed avocado, mayonnaise, and lemon juice. Season with salt and pepper to taste. Mix until creamy and well combined.
- Take two slices of your favorite bread and lay them flat. Generously spread the chicken filling onto one slice.
- Layer fresh lettuce leaves and ripe tomato slices on top of the chicken filling.
- Sprinkle cheese over the tomato slices. Optionally add pickles or hot sauce.
- Preheat a skillet over medium heat. Grill the sandwich for 3-4 minutes per side until golden and cheese is melted.
- Remove from the skillet, let it rest for a minute, then slice in half and garnish with microgreens.
