Preparation Steps
  1. In a mixing bowl, combine shredded cooked chicken, mashed avocado, mayonnaise, and lemon juice. Season with salt and pepper to taste. Mix until creamy and well combined.
  2. Take two slices of your favorite bread and lay them flat. Generously spread the chicken filling onto one slice.
  3. Layer fresh lettuce leaves and ripe tomato slices on top of the chicken filling.
  4. Sprinkle cheese over the tomato slices. Optionally add pickles or hot sauce.
  5. Preheat a skillet over medium heat. Grill the sandwich for 3-4 minutes per side until golden and cheese is melted.
