Method
 

Cooking Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Arrange the chicken breasts on a baking sheet lined with parchment paper. Drizzle with olive oil and sprinkle with chili powder, cumin, garlic powder, salt, and pepper. Rub spices into the chicken.
  3. Bake the chicken for 25-30 minutes until cooked through. Let it rest for 5 minutes.
  4. Cook the rice according to package instructions, using chicken broth. Fluff with a fork.
  5. Shred the baked chicken and mix with rice, black beans, corn, and enchilada sauce.
  6. Spoon the filling into bowls and top with shredded cheese.
  7. Broil bowls for 2-4 minutes until cheese is melted and bubbly.
  8. Top with avocado, cilantro, and a squeeze of lime juice.
  9. Customize with additional toppings as desired before serving.
