Preparation Steps
- Remove the beef roast from the refrigerator and allow it to come to room temperature for at least 1 hour.
- Preheat your oven to 450°F (230°C).
- Pat the beef dry and rub it with olive oil, minced garlic, rosemary, thyme, salt, and pepper.
- Place the seasoned roast in the oven and sear for 15 minutes.
- Reduce temperature to 325°F (160°C) and roast until desired doneness is reached, about 1 to 1.5 hours.
- Transfer the roast to a cutting board and cover loosely with aluminum foil. Let it rest for 20 minutes.
- In a saucepan, melt the butter and sauté chopped onion and minced garlic until softened.
- Stir in flour to make a roux, then gradually add beef broth and red wine.
- Add bay leaf and Worcestershire sauce, simmer for 10-15 minutes until thickened.
- Taste and adjust the seasoning, remove bay leaf, and serve gravy over sliced roast garnished with fresh herbs and berries.
