Ingredients
  

For the Beef
  • 4-5 lb Beef Roast Choose a tender cut like prime rib or ribeye.
  • 3 tbsp Olive Oil Vegetable oil can be used as an alternative.
  • 2 tsp Coarse Sea Salt Adjust to taste.
  • 1 tsp Black Pepper
For the Flavor
  • 6 cloves Garlic Minced, preferably fresh.
  • 1 tbsp Fresh Rosemary Dried can be used in a pinch.
  • 1 tbsp Fresh Thyme
For the Gravy
  • 2 tbsp Butter
  • 2 tbsp All-Purpose Flour Gluten-free flour can be used.
  • 2 cups Beef Broth Low sodium.
  • 1.5 cups Dry Red Wine Like Cabernet Sauvignon or Merlot.
  • 1 small Onion Finely chopped.
  • 1 Bay Leaf Remove before serving.
  • 1 tsp Worcestershire Sauce
For the Garnish
  • Fresh Rosemary Sprigs
  • Red Currants or Cranberries

Method
 

Preparation Steps
  1. Remove the beef roast from the refrigerator and allow it to come to room temperature for at least 1 hour.
  2. Preheat your oven to 450°F (230°C).
  3. Pat the beef dry and rub it with olive oil, minced garlic, rosemary, thyme, salt, and pepper.
  4. Place the seasoned roast in the oven and sear for 15 minutes.
  5. Reduce temperature to 325°F (160°C) and roast until desired doneness is reached, about 1 to 1.5 hours.
  6. Transfer the roast to a cutting board and cover loosely with aluminum foil. Let it rest for 20 minutes.
  7. In a saucepan, melt the butter and sauté chopped onion and minced garlic until softened.
  8. Stir in flour to make a roux, then gradually add beef broth and red wine.
  9. Add bay leaf and Worcestershire sauce, simmer for 10-15 minutes until thickened.
  10. Taste and adjust the seasoning, remove bay leaf, and serve gravy over sliced roast garnished with fresh herbs and berries.
