Preparation
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large mixing bowl, cream together the unsalted butter, light brown sugar, granulated sugar, and honey until light and fluffy.
- Add the eggs one at a time followed by the vanilla extract, mixing until smooth.
- In a separate bowl, whisk together the cornmeal, flour, baking powder, cornstarch, and salt.
- Gradually mix the dry ingredients into the wet mixture until a thick dough forms.
- Scoop about 1/4 cup of dough, roll into balls, flatten slightly, and place on the baking trays.
- Bake for 11-14 minutes or until the edges are set.
- Cool on the baking sheets for a few minutes before transferring to a wire rack.
- In a medium bowl, beat the softened butter, honey, and powdered sugar until smooth. Add cinnamon if desired.
- Frost the cooled cookies and drizzle with additional honey and a sprinkle of flaky sea salt.
